Can I include the complete recognized text?

Yes. Ask for full OCR text when processing the document; it can be grouped by page.

Can I avoid storing the uploaded file?

The privacy option asks Eagle Doc not to store the uploaded file. Its default is enabled; specify it when this matters to your task.
